1/2 - 1 day for a first timer.
Remove -
Tank
Carbs
Exhaust
Drive chain
Unplug electrical
Drain coolant and remove radiator
Remove motor mount bolts.
R & R engine
It's a little more involved and installation requires a lot of adjustments.
But if you feel confident enough to do what I've outlined, you should be able to handle it.
The shop manual gives you step by step instructions.
I suggest you purchase one if havn't done so already.

It depends what you mean by swap. If you mean, put a replacement engine in that matches a vt 600 its not bad
If you are trying to put in an aftermarket motor, it may not line up with the mounts and all that.
The average mechanic could easily handle a swap putting in the replacement unit. You might need a custom shop to put in a S & S motor, or JP etc

It all depends on what your are replacing the old motor with. If you are replacing VT 600 with a another VT 600 of the same year then it will take time dependent on your ability and tools. If you are trying to replace a motor with something other than what's already on the bike you could run into all sorts of obstacles.
