Actually, the word "cold" does have a noun associated with it that is analogous to the way "heat" is associated with "hot": the word is the Old English "ceald" (note that the vowel change between the two words is the same as that for "hot" and "heat"; are you really that surprised?), which, sadly, has fallen so much into disuse that most people today are unaware of its existence.

Heat is a form of energy.
If something is cold, heat energy is absent.
There is no energy that creates cold, there are only methods of removing heat energy which then lead to a cooling effect.

The "absence" of heat. Just like the color "white" is the absence of all colors, and the color "black" is the total of all colors. Heat is the absence of cold, and cold is the absence of heat.
