Well, if you're going to be using wired anyway, skip hooking up the gaming adapter and second router and hook the XBoxes straight into the Linksys router. You don't need all that extra equipment. If you really want to, though, it should work fine...just be sure to hook the gaming adapter into the WAN port of the second router.

Yes, that's actually a very good setup. I think your Belkin is probably a router (which is fine, good even) since as I recall they weren't really in networking in hub days, not that it matters really.
Again, the caveat being that if you're seeing problems now they'll probably be a bit bigger with two xboxes as the same time. If not you're probably pretty safe.
