I don't completely understand your question and what I can say is:

If you want the mails delivered to your PST file rather then reside on your server account, you need to change the default mail delivery location. For this you go to Mail Options in Control Panel, click Email Accounts and change the Default Mail Delivery to Personal Folders.

If you want the mails to be delivered to a specific folder on your server or PST, for that you will need to create Rules. You can access the rules from Outlook Tools menu.

Actually, this is my preferred setting, but it's easy to change.

In Outlook, select Tools, Options, Preferences tab, press E-mail options button, Advanced e-mail options, then (finally) check or uncheck the "In folders other than inbox, save replys with original message" box.
