They can win, their players are of a higher technical ability and their current team is almost certainly stronger than any in Latin America, but that doesn't mean they will win.
AC may not win because their opponents are going to be very skilled and on any given day with a bit of luck and good form any of the top clubs in the world can beat anyone one of the others. But another reason to be a little less confident about the result is that European clubs and fans don't take the game seriously at all. The Champion's League trophy is more important to them than the Fifa club world cup and they are motivated accordingly. The S. American teams and fans take this game much more seriously than the Europeans do, and so are more motivated to actually fight for it.
Either way, with transfers and retiring players....the team that won the champion's league could be very different than the one who will play in Japan
