from what i have found there is no diffrence in flavor between gas and charcoal. tastes the same. Now you will get some unwanted flavors in charcoal if you use lighter fluid or add unlite charcoal to burning coals (gives off an acidic taste)

Buy a bacl of mesquite or hickory chips place a handful or two in aluminum foil punch a few holes in the top and set it under your food. Don't know how good it works. I saw it on a cooking show on PBS - Grill University or bbq U - something like that. If you don't get enopugh smoke then open the foil more. Hope this helps! I use a charcoal grill and have a really nice wood smoker. I like gas too but just don't happen to own one.

I used to have a Weber charcoal grill, and I hated it. The difficulty and expense of loading up and stacking the briquettes, trying to get them to light, letting them burn down to the r ight temperature, and then the food still didn't always cook thoroughly. I bought a Char-Broil gas grill several years ago and have had no problems with it. The gas lights right away, the grill is ready in 10 or so minutes, there's no ash to clean up. It's just much more convenient. I've also used electric grills, and the convenience factor is the same as gas, but I personally prefer the taste of gas.

In my experience, men love briquettes. Women love gas or electric.

Gas grills are faster for both heating and cooking. Charcoal lends flavor. Both can give more flavor if damp wood chips are used in them (smoking). I have both. I prefer the charcoal for flavor but the gas is so much more simple. If I wanted electric, I would go in the house.
