Contrary to what one answerer has said, biology is not the easiest science, because it combines elements of chemistry, physics, and mathematics in its study. Thus, it's almost like 3 or 4 sciences rolled into one. So biologists, unlike other scientists, have to study the other natural sciences in pursuit of their interests, whereas other scientists, depending on their field of specialty, don't necessarily have to study biology to pursue theirs.
In truth there is no easiest science major. They all can be quite difficult and complex.

I think it depends on whether you prefer memorizing or math. Earth science and biology rely heavily on observing and learning the intricate details of many different types of systems. Physics, chemistry and astronomy rely on using mathematical models to explain different phenomena.
I assume that if you're asking the question, it is because you aren't passionate about any particular field. If you were passionate about math, you would probably already know it, so probably earth science or biology would be more interesting for you. Ask people at your school/college which instructors are most interesting :-).

It depends on what aspect of science you are interested in. If you are interested in the life sciences (biology, ecology, environmental science) and not the physical sciences (chemistry, physics, geology) then the life sciences would be easier. Of course, within the life or physical sciences you might find something easier than another. For example, you may find biology to be easier than ecology or you may find chemistry easier than physics.
I majored in Ecology as an undergraduate and found my biology and ecology courses to be a lot easier than the physical science courses. Within the physical sciences I found chemsitry and geology to be a little easier than physcis. I found all aspects interesting but I just had a harder time with the physical sciences.

You should not decide what courses to take based on what is easiest. You need to consider what your interests are, and where you want to be in the future.
