The original intent on baiting traps with cheese was to have something that smelled pleasant and wouldn't spoil if left for a few days. Smoked meat would draw dogs and cats, and dried fruits & veggies drew ants, so there wasn't a lot of choices. Some cheeses are tough and it would take a split second to grasp and run, so the bar would then kill the mouse. Nowadays, the scent and stickiness of peanut butter does the same thing, so cheese fell by the wayside.

I have no Idea why but mice actually don't like cheese. I think that mice might go for the cheese but rats definitely will because I used to have one in my house but I got rid of it in a humane way and we used random items of food and put them around the house as bait and it ate most of them without getting caught so rats will eat anything and everything

Actually a study was done and it was discovered that mice prefered peanut butter and bacon grease instead of cheese!

It's kind of weird that a scaley thing like a mouse that lives in warm places and has a slithery tongue likes cheese isn't it?
