The Allman Brothers Band is all you really need, but I highly recommend:
The Grateful Dead
The Band
Cream
Derek and the Dominos
Neil Young
A Band of Gypsies (electric blues featuring Jimi Hendrix)

Blackfoot, Black Oak Arkansas, and you might as well through AC/DC in there, too. Those boys are further South than any of the others!

I agree with the first two, except for Neil Young who sang "Southern Man" which was very negative about the South which Lynyrd Skynyrd responded to with "Sweet Home Alabama."
"...I hope Neil Young will remember...Southern Man don't need him around anyhow..."
