I believe it was President Reagan who summed it up best after the invasion of Grenada.
Grenada was the primary supplier of nutmeg to the United States.
You can't have egg nog without nutmeg.
You can't have Christmas without egg nog.
So the Communists were trying to steal Christmas.

This is a simple question, but it has a complex answer. While Stalin was still alive, his primary concern was national security. He worked to solidify his country's position by installing puppet governments in Eastern Europe, developing atomic weapons, and stealing the design for the American B-29 long range bomber.
Stalin's successor, Nikita Khrushchev, attempted to counter the perceived threat from the United States by developing weapons that could strike the US directly - intercontinental ballistic missiles (ICBMs). Call the space race what you want, but the development of these technologies were paramount to these programs. He also countered the placement of American nuclear weapons in Europe with the placement of weapons in Cuba.
In the 1970's, Leonid Brezhnev oversaw a thaw in the Cold War as it became obvious that the Soviet Union required Western technology and expertise if it wanted to modernize industry and agriculture. Trade with Western Europe and the United States was at an all time high. The SALT treaties were signed, capping the numbers of nuclear weapons for all sides and granting the Soviet Union parity. However, the SALT II treaty was withdrawn from the Senate in 1979 by after the Soviet invasion of Afghanistan.
The Reagan-Gorbechev era saw an escalation of tensions. Gorbechev recognized that the Soviet economy, long teetering on the edge of collapse, could no longer afford to pace the Americans in an arms race. He sought reductions of nuclear arms and and end to the American effort to put weapons into space. He had some success in the late 1980's, but by then it was too late. The Soviet Union collapsed under the weight of its own inefficiency.
The Soviet Union's major aim during the Cold War was to survive and counter the moves of an adversary that realistically was a far greater threat to it than they were to them. Policy tended to evolve as leaders on both sides changed, but ultimately the Soviet Union was unable to maintain the pressure and collapsed.

In theory or in practice?
In theory it was to secure peace and prosperity for all mankind.
In reality the only aim of the Soviet Union was to secure world domination for the benefit of the ruling oligarchy (also known as the Politbureau). They did it without regard for any treaties, humanitarian concerns or any other considerations. During the history of the USSR they allied themselves with just about every dictator (including Adolf H) if only it suited their policies.
The people murdered in the process number in tens of milions.
They carried war to every corner of the globe- even if the only "benefit" was to cause a minor loss of comfort to the US
Their propaganda machine was avesome. Some parts of it still remain- you may have noticed the "international Peace movement" which advocates demilitarisation, but only in the "western" nations

The foreign policy of the USSR is aimed at ensuring international conditions favorable for building communism in the USSR, safeguarding the state interests of the Soviet Union, consolidating the positions of world socialism, supporting the struggle of peoples for national liberation and social progress, preventing wars of aggression, achieving universal and complete disarmament, and consistently implementing the principle of peaceful coexistence of states with a different social system.
