This is the 3rd time this has happen to the car. Everytime i drive the car in the highway and i'm over 100 mph the bolts on the water pump tend to get lossen alittle and starts leaking antifrezze. Why is that? The gaskets are good and everything.

Go to your local car part's store and purchase a bottle of loctite thread locker.
When the engine is cold, remove each bolt in turn, put some thread locker on the threads and re insert them, making sure they are very tight.
The thread locker will ensure the bolts do not come loose.
If the water pump still leaks then you will have to investigate either the front cover or the pump to see if either has a crack which is opening up when hot.
