If I have a hill and I want to turn it into a terraced farm, do I start with the excavation at the top or the bottom?

Believe this or not, during WW2 fighter pilots training in the Rocky Mountains spotted old Terrace farms that were left over from Chinese emigrants that run from there persecutors from the West Coast building the Railroads in the 18th century. They hid out in the Rocky Mountains and lived their ,many years and Terraced farmed and no one ever found them. They gradually moved away into the urban areas through the 19th century.
So, this works very well. You start at the top, erosion holds the soil back and prevents it from running downhill. It's a good idea you have. Hats off to you.

It would seem like you could start at either the top of bottom. I would think starting at the top would be easier.
