Say we're talking about only one kind of book - biographies, for example. Now, there are a few biographies on the table (for example, of Mother Teresa, Elizabeth Taylor, and Da Vinci). When a person is pointing to the books on the table, is it correct to say "this kind of books" or "these kind of books"?

On the table, you have books - plural, more than one. Those books are all of one kind - biographies (don't know about putting Mother Teresa next to Elizabeth Taylor, though). In this usage, 'kind' is a collective noun with the definition: a group united by common traits or interests.
Just like any other collective noun, it is singular, but it is composed of many units and when you speak/write of them, they are plural:
A box of chocolates
A herd of elephants
A crowd of people
A kind of books

If you point to one of the books, you say, "This kind of book" and if you mean to include them all, you say, "These kinds of books". The first is singular, because you are refering to one book, the last is plural because you are talking about more than one book.

Grammatically correct to say "these kind of books" only because the kind (or type) of book is plural (i.e. biogrophiES, novelS...etc.) books is also plural because there are more than one book! Hope this helps!
