This is almost the wrong place to ask that question but you are in luck.

Go to www.motherearthnews.com and type in chicken plucker. There was some drawings on how to build one just a while back and it was simple as all get out to put together.

Next go to www.homesteadingtoday.com and join. as a member you can ask questions and the people on there are good country wan-ta be's. Some really are good country people.
Some are just Planning on getting a homestead and raising their on food.
Some are doing so and learning where they are such as myself. I live in the city just on the city limits but have free access to 20 acres of old tobacco field that adjoins my 2 + acres and have just completed building a chicken tractor that I learned about on this site. Had never heard of a chicken tractor before but it is a good deal to own.
Some have moved out in the country 10 - 20 - or even 30 years ago.
99% of them are friendly as all get out and will answer any question you have regardless how stupid you may feel it is.
As for the scald er, from my understanding, any 20 quart or larger, stainless steel pot will do fine.
Good luck and happy plucking.
Like I said, the plucker in MotherEarthNews is simple to build. I am going to base mine on that and I am good at designing and building things.

No offense meant but when I saw this Q I had to answer. I have no clue truthfully, but you reminded me of life on a Chicken and grain farm where I grew up. We had probably 500... and "free range" birds in a 1940's sense, not as that's defined today.

Many were "EGGERS" and many were split out for market. There were no "machines" or equipment other than heavy neoprene gloves if no one wanted to actually handle the Chickens, a large pot of Boiling water, a chop block, a sharp cleaver, and my Grandmother and I doing most of the rending.

Regarding your search, and knowing how "farming" is pretty much becoming a CORPORATE Sport, write off, in absorbing owner held, small farms, have you tried auction sites, even those disposing of farm equipment? NOT NEW?

I really wanna assume you have a feed and grain store not too distant from you. Have you thought to post your own ad? IE: NEEDED...yada yada yada,,,call 555-555-5555?

Certainly as vast as the WWW is,,, there has to be keywords you can use in your search that at least allude to NOT NEW.
