512Mb videoram is not always fully utilized in games (how much more the 1Gb). 256Mb ddr3 videoram will beat 512Mb ddr2 ALL THE TIME. Gaming performance comes from graphics processor architecture, high core clock and high memory clock.

About the on Board memory, its means that the card itself only has 512mbs of video memory, but you can add another 500mbs by using some of RAM memory, thats called sharing the memory.

In Example, if you have 1000MBs of RAM memory, you can use 500 of those MBs of RAM memory as Video memory, and that will leave you with only 500MBs of RAM

And on a Video card you should look for at least 128mbs of memory, OpenGL support, Transform & Lighting support and Pixel Shading, that should play all games available on the market.
