Always look for the "VeriSign" icon on the site that will perform your credit card transaction. If you don't see the "VeriSign", icon I would avoid the site for credit card use.

Treat using your credit card on the internet like you would using it in any other retail situation.
The "signed by Verisign" only guarantees that your credit card number will be securely transfered to the merchant. It does NOT guarantee that the merchant will not do shady things with your credit card number after receiving it. I've set up several ecommerce sites, and getting an SSL certificate from Verisign is trivially easy.
Even so, your credit card number is still more likely to be stolen by the waitress you hand it to and let walk off with it for 10 minutes, the gas station attendant who saw the card, or the guy digging through your mail or trash looking for receipts.
