The biggest boom coming soon is the "baby boomers" retiring. Some have a lot of money and some don't. You need to either sell to them or offer a great part time job and take a commission on their labor. Or both. You figure out the products to sell them or you figure out the service you can staff with part time only.

An ice cream truck or snow cone stand. It is seasonal and a good start to learning how a private business should work. Afterward, working concession stands and managing several from one location would be a good second step. Also, if you have some help, construction jobs are usually well paying if you know the trade well, and you only need to know one like insulation, framing, concrete, etc.

Lawn maintenance, can start quickly and small in the beginning. As you gain customers, get more and better equipment, bring on some extra help, go after more lucrative commercial contracts.
