I have a 2ft tank with guppies and neon tetra`s and a 4ft tank with a small Oscar, parrot fish and a cat fish. Both tanks have alot of trumpet snails in them. The temp of both tanks is about 80F.
The question is that in my 2ft tank you can always see lots of snails and baby snails on glass and plants at day or night but in my 4ft i can stare at tank for ages and not see a single one, why is this?

Maybe your Oscar, parrot, and cat fish are having a few snacks. Guppies and neons can't eat them, but cichlids will eat the smaller ones.

with in the 4ft tank the catfish that you own may be eating the snails but this depends on the catfish that it is, if it is a synodontis then this will if it is a pleco then it wont.
it is more than likely your Oscars will also be eating the snails.

Within the 2ft tank with it being a standard community tank snails will breed in the tank happily and will not be fed upon, you can either use a snail bash treatment from INTERPET or buy a clown loach these will eat 65% of the snails and then the treatment will kill the rest or you can use the treatment alone over two days most of the snails will be destroyed (95%)

More than likely your fish are eating them or they may just be hiding. I have trumpet snails too and mine stay down in the rocks almost all the time. I have to look really hard to find one.
