There are some great activities to do in Las Vegas with families. I visit there often for family and I have a 7-year old and these are all approved by her! I’ve included some links – I hope you have a great time with your family!
Hoover Dam Tour – very cool and historical.
Secret Garden & Dolphin Habitat at the Mirage – animals are well taken care of and it is a nice facility.
Las Vegas Zoo – small and reasonable, not impressive – but it is a destination.
Magic Show, like Rick Thomas – geared towards the family and they have 2:00 P.M. shows. There is also a Pet show, but the magic shows are cool.
Red Rock Canyon – visit the park, see wild creatures – it’s a nice drive with good scenery.
KidsQuest at the Station Casinos – Now this is my high recommendation! KidsQuest is a babysitting facility for all ages with many fun activities. The kids play while the parents get to visit the casino and have a nice, romantic dinner, catch a movie, bowl, or gamble. Family time is great, but sometimes a break from all that togetherness is beneficial for all! Reasonable rates too.
The Pool – spend the day in the hotel’s pool. Most of the hotels have outstanding pools.
Star Trek: The Experience – Okay, I’m a trekky and this is a great ride/adventure. You actually get beamed aboard the Enterprise! You can even eat at the Star Trek restaurant. It’s in the Las Vegas Hilton on Paradise Rd.
Centennial Hills Park – City of Las Vegas Parks. This park in particular I have been to and it is good for young ones with a water feature. Pack a picnic and spend the morning or late afternoon (it’s hot).
I believe the MGM has an amusement park too, but I haven’t gone.

I think you're nuts but there certainly is plenty do as a family in Las Vegas. Go out of your way to avoid the casino floor as it is not for kids. Also, I think kids get exposed to too much on the streets after dark in Las Vegas so call it quits as a family once the Vegas nightlife comes alive.

When I was younger, if me and my friends weren't at Circus Circus we were at Mountasia. They have a video game arcade, go karts, laser tag, miniature golf(complete with waterfall and cave), a rock climbing wall, batting cages and my personal favorite, bumper boats!!! =] There's also Wet N' Wild (a water park), GameWorks is always fun and there are lots of attractions in the hotel/casinos (like animal exhibits, shows) If you're not on much of a budget, I highly recommend you take your family to see a Cirque du Soleil show. My favorite is O in the Bellagio but for younger kids, I think Mystere at the Treasure Island is the way to go. I wish I could name more but I haven't been out in so long XD I hope you and your family have fun wherever you decide to go!!! o^-^o

Roller coasters at Sahara and NYNY
Thrill rides atop the Stratosphere Tower
Motion rides at Excalibur (along with midway games)
IMAX at Luxor
Bowling at the Gold Coast.
Shark Reef at Mandalay Bay
Masqaurade Show at the Rio
Star Trek Experience at the Hilton.
One more thing... the Wet n Wild water park that someone else mentioned is no more. It closed 2 years ago.

Game Works ( I thinks that's the name) it's next to M&M Factory, games of all kind to play, a rock wall, you can buy a pass that's good for all day, take them to the light show everynight in up town in old Vegas

There is a free pirate show at Treasure Island. There is a large aquarium at Rio. Red Rock Canyon is nearby and there is an Old West type town near there that does cowboy shows.
