Stacking it in a roll of pennies it stands out instantly - I don't think it's a double-die variety, but it's really interesting because pennies usually have a flat edge? Is it an error of some sort that I'm unaware of?

Study the curved edge. If it's a clean and smooth curve with the toning consistent all over, then you have a cent with a clipped planchet error. This happens when the steel rods used to punch out blanks from the metal strip overlap a portion of the strip already punched. Its value depends on the nature and size of clip/curve. Lincoln bronze cents with this error is valued at around $2 to $4. Value is greater for coins with larger clip or multiple clips.

The coin most likely has been altered or damaged outside the mint. A double die has only a doubled image or legend and has nothing to do with the edge or rims. You can take it to a coin dealer to check it out. Going by the coin papers over 99% of reported strange new error coins are actually damaged coins, the damage done outside the mint. It needs to be seen anyway, just to make sure.
