The most fun to watch? A tank of mermaids of course! LOL
Seriously, I prefer a well planted tank of small, colorful freshwater fish personally, but that's really something you need to decide. It's really a personal matter. Spend a little time around some pet stores and just watch tanks for a while. You'll soon know which you enjoy best

Sorry, but a betta is the only fish you should consider. Small schooling fish need larger groups and more swimming length due to their higher activity levels. MAKE SURE you get a small heater. Bettas like it very warm. 76-82 is the overall range, but 78-80 is ideal. And yes, 1 degree makes a difference. Instead of purchasing an entire filter, get some largely pored filter sponge. Use a pencil to poke a hole in it that goes about 2/3 of the way into the sponge length wise. Slip this sponge over the tube that pumps out air (the tube that was previously attached to the ugf plate. Voilà--diy sponge filter. You can use the money you save from buying a filter to pay for the mini heater. ;D In addition to the betta, you can keep a small snail like a nerite or spixi (no apples or mysteries) or 3 ghost shrimp (cheap, but don't live long at all and can get territorial with each other) or up to 7 cherry or amano shrimp (cost more but should live longer and the cherries are cuter and the amano help eat algae). If you can't find what you want in a lfs, you can order online. Make sure you research care of these guys since they are quite different from fish. Make sure you do a fishless cycle before adding any fish to the tank!

I would say freshwater I like Tetra, platies, corydors, OH and don't forget the African dwarf frogs they are the most interesting to watch very funny and lively. They get along with community fish These frogs stay at bottom of tank all the time They only swim to top of tank to get air than back to bottom. You do want to make sure you have a top on the tank because they could jump out. I have 8 of them in my 29 gallon and i really enjoy watching them.

For activity you can have more fish in a fresh water tank than a salt, and it will be cheaper, and easier to maintain. As far as types of fish it really varies, with a 75 you have a lot of room and can get different fish for different levels. Some people like predatory fish that they can watch hunt such as oscars. Schooling fish like tetras, goofy catfish, eels, etc.. There are endless possibilities, is your water naturally hard or soft? pH?

I have a brackish and freshwater and coldwater tank.
I find my brackish fish are more entertaining to watch.
But that's just my opinion.
