I've heard that "the kingdom of Dulak" is really the Disney company, and that Lord Farquaad is supposed to be Michael Eisner. If that's true, then that makes the movie even funnier than it inherently was.

I think your question is excellent. Shrek really is the "anti-Snow White" or "anti-Cinderella" isn't he. He is not some sweet oppressed flower waiting to blossom. He is an ogre and very content and happy to be so.

Even the twists on the princess looking for her Prince Charming is a great spoof.

It's meant to be a real in-your-face blow to Disney that they can make the Disney-level money and do it by spoofing all the little fairy tales Disney used for its movies.
