I am wanting to set up a 125 plant tank but am unsure how much filtration I will need. I plan to make it a community tank maybe heavy on rainbows.

Rainbows will not mind plenty of current in the water so I would suggest to not hold back at all on the filtration. Obviously you will want filtration rated to handle a tank that size, but due to the size I would also suggest you use at least 2 power filters. This allos the flexability of cleaning them on a rotating basis, allow for better filtration at each end of the tank and also allows for a bit of protection in the event one of the filters should fail.

Also be sure to use an extension tube so that the water pick up will extend to near the bottom of the tank.

You might want to try a sponge filter. They do make them for 125 gallon tanks. However not all stores carry them so you might have ask the store to order one for you.
