I used to be such a French dressing fan...but after living among Italians I will always go for any dressing with Balsamic Vinegar...gives a much better kick to the flavor than just plain vinegar.
All you need is Extra Virgin Olive oil, Balsamic, salt, pepper, and oregano. Add each ingredient directly to the salad (the measurements are really up to your taste, but it's hard to mess it up unless you spill the salt)...and wow, it's really good...and way healthier than French dressing!
My second fav is my mom's recipe:
Dijon Mustard, Mayonnaise, olive oil, salt, pepper, oregano, and garlic. Prepare this in a bowl and mix before putting it on the salad. The mustard gives a great kick..and yes, it really makes a difference between using dijon and french's mustard. This is very tasty for salad, but very very very nice for dipping vegetable sticks. And for a sidenote...if you remove the olive oil and use all the other ingredients...it works as an amazing marinade for beef, chicken and pork...especialy tasty for barbeques!!
Just to let you know, I am not a vegetarian...and I'm definitely not a health freak...I just want to share with everyone that once you try these...you will not go back to what you preferred before.

Homemade bleu cheese dressing is my favorite - bleu cheese, sour cream, cracked pepper, a dollop of mayo, and a splash of sherry.
A close second is Central Market Four Pepper French - traditional French dressing spiced up!
