If you want to know about domain features. The standard has the basic tools you need for a domain controll. Like DHCP, Active directory, and etc... The Enterprise is suppose to have a faster response and be able to deal massive amounts of traffic. Most ITs who have more then one Standard W2K3 connect it to an enterprise server. There are also some minor extended features along with more liecenses and other stuff.

One of the most important differences between all the Windows 2003 Server editions is the number of users that it will allow.

For example if you wanna setup a Web Server, then a Standard edition will not be enough, because, as you can imagine the internet has millions of users. In this case you need a Web Edition. This doesn't mean that millions of users can login into the system, but, the server will allow millions of users to access the IIS web server.

Another situation would be you want a large number of users to log in but, don't want a web server on it. In this case you would install an Enterprise Edition.

Or if you're interested in Virtual technologies then you need a Win 2003 R2 edition.
