I heard you couldn't if you had a tattoo, is that true or just bullshit?

There may be a dress code stipulation that tattoos must not be exposed at work, or that offensive tats must be covered. Other than that, most government agencies have adapted with the times.

Piercings might cause you some problems at the metal detectors though.

If it says death to all govt; officials, i would say you've had it!

i have a state job in michigan and have many tats. no one cares. not sure about federal gov't. but i don't think that can bar you from being hired.
