Carmine has traditionally been a girls name, but If you look at the Gotti Family (John Gotti, or his family on the show, Growing Up Gotti, one of the boys names is Carmine) Its primarily Italian, possibly Sicilian in origin, and would be Ok for a boy or a girl.

Carmine is a boy's name. It has never been a girl's name. Carmyne is going to be misspelled and mispronounced constantly and the poor little girl will probably be teased mercilessly.
