Mr. Brooks, Dexter, Silence of the Lambs, Hannibal, Hannibal Rising, The Red Dragon, and more Dexter should keep you busy for a while. While not all of these would qualify as horror (most of them would be best classified as thrillers), they do a much better job of capturing the essence. Movies like Scream, A Nightmare on Elm Street, and House of Wax make for terrible representations of actual serial killers, they're almost comical - to the point where it ruins the films.
