many people use light colored paper, in hope that there job application will stand out among others. I have asked this question to a interview after i received a "summer job."
He laughed and stated that he takes all the applications as they come in and read them in order.
He then sorts them according to credentials that are needed to fill the job.
He then weed out the best applications and interview.

I had used eggshell ( light beige) paper, and he said that the color was of no importance. The standard business color is white.
