We rented a property to a acquantainance and since it was supposed to be a short period of time, we did not make a contractual agreement. This little prick has been late and she now owes one full month of rent. What are my options, I need the money to pay the mortgage

You cannot 'force' her to pay. Your only option is eviction and small claims court action to obtain a judgment against her. Then you will have a legal claim to the monies. Getting satisfaction of the judgment is another whole issue. It may require garnishment or other legal means to accomplish your goal.

Clearly this person isn’t going to pay at all, rest a storage unit and pay for 30 days worth of rent and move their things into it, as well as change the lock on the place.
Tell the person where their stuff is and that if they want it you’ll give them the key to the lock on the unit. You might want to use that as a way to get the rent payment for them but it probably won’t work. Get someone else to rent instead, and if the other person's stuff is in a unit then the space is open for someone else to move in right away.

Evict her and then take her to a small claims court, this will make sure you have used your legal options. So even if she pays you what she owes you which she may not, you have severely effect her credit rating for 6yrs. So you may not get your money but you will get the last laugh

A verbal agreement is every bit as enforceable in court as is a written one.
