Hi I understand that when you overclock, temperatures go up. What temperature should my GPU not exceed while at idle and at full load assuming the computer is running stable

The reference design here goes up to 70°C.

Better not exceed that. Or consider replacing your cooler if you will play games at overclocked settings. Check out the Zalman coolers.
