human blood cells do not have a nucleus (like that of all other mammals). So first you would check if the blood cells have a nucleus (just use a microscope, it's easy) if yes, then it is not mammalian blood.
Not quite sure how you would distinguish human blood from that of a cat or dog, but I would imagine you could use antibody tests like you do for blood group testing. Here is a website where they say they use a radioimmunoassay (RIA) for that.

Take the blood sample and then purify the DNA. Then run it on a gel against a control, other animals, and another human DNA sample. If the band of the blood sample matches the same MW as the human one, then it is human.

Depending on the blood simple microscope examination will determine from the different shape of the red blood cells and other components, especially the most common other bloods, like dog, cat, cow, horse.

dna tests and also you can run other tests to determine that as well. There are certain antibodies only human blood contains etc.
