No, not all cheeses are made with mold. Bleu cheese is. Swiss cheese is made with cultures, which are microbes.
The culture eats certain parts of the milk, and gives off an acid which makes the milk get hard (co-agulates it).
Some cheeses are co-agulated with other acids -- marscapone is made with tartaric acid, lemon cheese is made with lemon juice, some ricottas and some other cheeses are made with vinegar. These wouldn't have mold in them, nor would they have cultures.
If you are sensitive to mold, though, mold grows easily on cheese, so you'd be better off getting your calcium somewhere else.

Traditionally, cheese was made as a way of preserving the nutrients of milk. Cheese is the fresh or ripened product obtained after coagulation and whey separation of milk, cream or partly skimmed milk, buttermilk or a mixture of these products. It is essentially the product of selective concentration of milk. I don't think mould comes into it at all.

No, but they're all made from sour milk--and some cheeses will develop mold if they spoil.

no not all cheese, blue cheese has mold as do a few others. swiss, cheddar, american, colby, monterey jack...no mold.
