I can think of one player. Chicago Bears WR Musin Muhammad. In 2004 at age 31, he posted 1,405 receiving yards and 16 TD's with the Carolina Panthers. This was the year that Steve Smith broke his leg and Mushin had a monster year. He had posted only 2 other seasons above 1,000 yards before that season in 1999 and 2000. It is possible but rare.
