I went to an Ihop and various other diners and it seems that pattymelts generally cost more than cheeseburgers but come with less stuff. It just doesn't make sense to me, maybe I'm missing something.

Because a Patty-Melt is on rye bread, has grilled onions and melted cheddar cheese as opposed to a hamburger which is on a hamburger bun has no grilled onions and has a slice of american cheese.

It all boils down to the quality and cost of the ingredients. As others have already mentioned, the Patty Melt has a higher grade beef in it with less fat.

They use a more expensive meat with less fat in a patty melt. They probably figure they can cover up extra grease by throwing cheese and other toppings on a regular burger.

In my place its the same patty but the grilled onions & rye bread are the reason for the upcharge. Its not much, tho. 50 or 75 cents more.

A pattimelt is labor intensive if it is done correctly. A burger is simply built on a bun, a patti melt involves grilling onions, then grilling the burger, onions and cheese on rye or sourdough bread. Takes more time and the bread cost more.

Sometimes it is not the ingredients that count, but the time and preparation something takes to prepare it. If it is time consuming, then you are probally paying for the time IT takes to prepare it, instead of the cost of the actual product.
