Villi just increase the surface area of the small intestine lining. Since all food is absorbed through the lining of the small intestine, having the lining very folded into villi increases the area of absorption so that nutrients are absorbed more efficiently.

Absorption of digested food materials takes place in the jejunum of the small intestine. The intestinal walls are folded into many projections called villi to increase the surface area to volume ratio. This allows for more effective uptake of nutrients into the bloodstream.

Each intestinal cell has it's cell surface membrane folded into microvilli which further increase the surface area to volume ratio.

The villi are critical to digestion, the job of the small intestine. They are the small bodies that line the wall of the small intestine and without them you would not be able to absorb nutrients from your food.
