Hate to burst your bubble, but you use 100% of your brain all the time. You may be consciously aware of only 10% of your brain activity, but the other 90% is always working. Think of all the activity your brain has to mediate....sensation, perception, thoughts, movement, your circulatory system, your circadian rhythm....and that's just the tip of the iceberg.
Almost every nerve cell in our brains is active most of the time. Scientists can detect this activity by measuring the electrical currents of nerve cells near the surface of the brain. More complex tests like PET (Positron Emission Tomography) can detect oxygen consumption, blood flow or glucose consumption (the sugar that is the brain fuel) by active neurons in all areas of the brain, not just the surface. Just about ALL of the human brain is busy all the time—even when we're sound asleep.

The 100% we do use has redundancy built into it so that if we lose brain cells we can still function at a high level. This is very important because we are continually losing brain cells (specifically neurons) and adults don't tend to grow new ones. If you lose large chunks of your brain suddenly you would notice the difference, though during development (and to some extent in adulthood) people's brains can adapt to some forms of brain damage. In rare cases this adaptation can be very successful despite considerable reduction in brain mass (e.g., in hydrocephalis) - but even in these cases there is usually (nearly always) some reduced functioning if the right tests are made.
Alternatively you might mean something else - such as why don't we think more efficiently or more rationally? That's probably a much more interesting question but much harder to answer briefly.

The idea that humans only use 10% of their brains is an urban myth and is off by 90%. It probably arose from the fact that if more than about 10% of neurones fire at one time it results in a grand mal seizure. That piece of science fact has not stopped so-called psychics, such as Uri Geller, making the spurious claim that if we used all of our brains we could develop psychic powers.

you know what nearly everyone uses about 80% + on there brain this saying of 10% is false, if your trying to boost your brain then take some omega 3, exerciseand do some puzzles

People often use 100 percent of it, but rarely when taking a test. Peak levels can occur at Rock Concerts, Olympic Events, and other events., but is never possible alone in a test situation.
