My personal favorite is a tie between Rincewind the magician & Otto von Chriek the vampire photographer.
I like Rincewind since he's the first character I read about in the series. I find it funny how he's one of the few characters who not only recognize how dangerous a situation is, but tries to keep from getting into said situation, even though he fails.
I like Otto because he's just pretty darn cool. A vampire who is giving up blood & takes up photography to ignore his bloodlust?
If you haven't read these books, I heartily recommend them.

Death - because I love the way Ultimate Reality has become increasingly human throughout the series. I mean, come on, the anthropomorphic personification of this natural process taking an apprentice, having a granddaughter, and liking cats? And you have to love the way he is described and the very human things he tries to do that he can't get right (check out the swing he made for Susan in "Soul Music").
Vimes - because he gets angry when people try to recognize him for a job well done and he takes a new dartboard for the Watch over a commendation. Because he enforces the law equally, from arresting a dragon (Guards! Guards!) to detaining entire armies (Jingo). Most especially, because he is devoted to democracy, not because it's a high minded ideal, but because he doesn't understand a system where the people go out and slaughter one another at the behest of a ruler while said king sits around and does nothing.

I have to say Death and Vetinari.
Death because he make an appereance in most of the books and SPEAKS LIKE THIS
and Vetinari because he's such a complex character. He might be a tyrant but he makes a damn good leader. We need more dictators like him!
