It's called a figurehead. It doesn't have to be of a woman. It can be of a man or animal, too.

The farthest forward, pointed end of the ship is called the 'Head'.

The forward sail is called the 'Head Sail.

The forward support guy, called a 'stay', is the Head Stay.

A figure on the head of the vessel is called the "Figure Head".

When men went to the toilet at the front of the ship it was called the "Head" as the Navy calls the toilet to this day.
