I always thought eggplant looked and felt kinda gross. And I can't stand it when it's used for a substitute for meat, but I had this vegetarian dish at a Persian restaurant one day, and they mushed the eggplant with an array of other vegetables and it was delicious.
So simple answer, I dislike it when it's a replacement for meat, and like it when it's used like a vegetable.

I like both, I think a ripe eggplant has the coolest dark purple color- and the taste is mild that everyone could try it and not think it's yekkky

I've tried to like eggplant. Tried several recipies, and no matter what it's gross. I like the way it looks though, adds a nice quality to a still life.

It looks cool. All deep purple with a dark green top. Tastes a little....yuck for me though.
