In the bible the disciple Thomas was the one who said that until he sees the nails in Jesus' hands and feet he didn't believe even though everyone else believed without seeing Jesus' after he arose from the dead. So when someone doesn't believe until they see it they are often referred to as a doubting Thomas.

The phrase "Doubting Thomas" comes from the story of the disciple Thomas in the Bible. When Jesus Christ first appeared to the disciples after his ressurrection, Thomas was not present. When told about the resurrected Savior, Thomas responded he would not believe Christ was resurrected unless he felt the nail holes in his hands and the hole in his side. Thomas was present the next time the Savior appeared and after feeling the nail holes and the hole in his side was told to believe and to quit doubting. This is the origin of "Doubting Thomas".

It comes from the Bible. In the New Testament. After Jesus had risen from the dead, one of the apostles, Thomas, refused to believe that he had risen. He did not believe no matter how many people told him. Until he saw Jesus with his own to eyes and touched his wounds, did he believe. Thus, the phrase, doubting Thomas.

i'm Doubting Tom !
Not from me!
As Per Wikipedia:
Origin
The term is based on the Biblical account of Thomas the Apostle, who doubted the resurrection of Jesus and demanded to feel Jesus' wounds before being convinced (John 20:24-29). After seeing Jesus alive and receiving the opportunity to touch his wounds — according to the author of the Gospel of John — Thomas professed his faith in Jesus; on this account he is also called Thomas the Believer."

From the Gospel according to John. After Christ's resurrection, Thomas refuses to believe He's risen until he can put his hands in Christ's wounds.

Thomas couldn't believe his eyes, and had to feel the wounds in Jesus' hands before he could comprehend the resurrection.
