Well, in poetry the use of monosyllabic words accelerates the flow of the lines, whereas pollysyllabic words slow down the verses. You pretty much have the same effect in prose- monosyllabic words and short sentences are good for conveying tension on a battlefield, for example. Polysyllabic words and long, meandering sentences are good for psychological writing.

Why does anyone use words fo one syllable or more than one? If an author used only monosyllables, it would soon become unreadable (if there are even enough words of one syllable to make a story with longer than a paragraph). Of course one could write a book containing nothing but long words that would also be unreadable. The brain needs both short and long words in a book to keep interest in reading it.

Not even childrens' books are written in words of one sylllable.
There are books that actually use words beginning with one letter, such as An abalone abondoned an abyss as an African antelope achieve an axiomatic angle....and James Joyce in "Finnegan's Wake" tries to use Anglo-Saxon words only, using compound words such as "agenbite" and "inwit" to mean "remorse" and "conscience", for example.

One of the writing courses I attended recommended the use of monosyllabic words instead of polysyllabic words in business writing in the interest of brevity. Monosyllabic words are clearer and easier to understand, for example, kill versus assassinate. The word "kill" conveys a clearer meaning when compared to the meaning of the word "assassinate." Monosyllabic words are more accurate, shorter, and clearer.

Because you have to use monosyllabic and polysyllabic words to write...unless you are using hieroglyphics.
