Same reason that (some) men have beards and deep voices. It's one of what are called "secondary sex characteristics". The idea is it makes them sexier to lionesses, and more intimidating to other male lions. The evolutionary justification is that it probably signals health and virility. To be honest, I have no idea if that has ever been measured in any way, although it seems like something you could check.

Only male lions have manes. Females do not.

FYI: female lions prefer males with darker mane color.
