Are there any SLR "lenses" with a Nikon mount that use mirrors instead of actual lenses? Do all SLR "lenses" just use real lenses or are there any that use mirrors instead. I'm asking because I'm working about color performance.

The color performance of modern lenses is probably as good as you can get, but you can get folded optic lenses.
To get a true mirror setup you will have to put a Nikon mount on a Cassegrain telescope.
