I am making my daughter's wedding gown and want to pleat the silk. I tried measuring on a large table and ironing them in but the pleats aren't consistent enough. The pleater boards I have found are only 11 to 15" wide.

Try one of the pleater boards you found and when you reach the end, stop and stitch those pleats into place. Then continue on with next section, and so on.

Make a template from pasteboard. Cut two "teeth" 1/2" wide with a thin slot in between and round the ends. (The slot needs to be only wide enough to easily slide over the fabric.) Slip the comb over the fabric and give it a turn. Holding the pleat, slip the comb out and pin the fabric, then repeat. It may take a few times to be consistent and to get the pleats close enough together, but it is doable.
