As far as the "How do we know we have one" question...
We can know we have one AFTER we assemble a list of characteristics which we decide belong to "mind" and THEN recognize that we have these characteristics...
And
We can know we have one BEFORE we have an exhasutive or slightly incorrect list...

The mind is a label we use to define a 'location' in the brain where a variety of cognitive activities occur.
