It means we remember how we want to,not exactly.

we don't take a snap shot and file it away to be brought back all it once in our brain.. we break down smells, sounds, touch, taste.. everything.. then if one of those are triggered the others are recalled and the event recreated, or rebuilt.. this, and crossover is a large part of why we get many false memories... also because the brain just fills in the gaps with whatever construct seems the most logical.
