Lots of "Z" players, some pretty good -- Todd Zeile, Gus Zernial, Jeff Zimmerman (would have been 1999 AL ROY if the voters had any respect for middle relievers; amazing season), Richie Zisk, Barry Zito... and the last man in the major league historical alphabet, Dutch Zwilling.

There never yet has been an "X" surnamed player in the majors. Joe Xavier, a farmhand for the Brewers for years, made it as far as AAA in the late 80s/early 90s, but finally gave up on baseball here, played in Italy for a while, then retired. Baseball America tracked his progress for a few years, in the hopes that he would at last pioneer the "X" section of the encyclopedia, but alas, no... and so, still, not yet.

Currently, I do not believe there are any players whose last name begins with the letter X.

As for Z last names of players who are good you have:
Zambrano, Carlos (P)
Zito, Barry (P)
Zimmerman, Ryan (3B)
Zumaya, Joel (P)

Of course, there are others, but those players meet my standard of really good players. The link shows all major league baseball players as of 5/21/07 with last names that start with Z

There has never been a major league player whose last name started with X. For Z's, Barry Zito is your best bet among current players, Todd Zeile among retired guys, and Don Zimmer among managers and coaches.

Carlos Zambrano (Pitcher. Chicago Cubs). Joel Zumaya (Pitcher, Detroit Tigers). Those are the only two I can think of at the moment.
