For instance, I just want to deposit checks into a checking account and I don't want the people who wrote the check know it's going into a different account. I don't want to sign the checks, just deposit them.

Yes you can. Office Depot or Staples has them for under $20. Have them put your account # on it or else you will end up writing that part anyway.
