I had some old organic garlic cloves in my fridge that were getting sprouts on them. I planted them in my vegetable garden. Can I expect to harvest anything? How should I care for the garlic plants, and how do I know when they are ready to be pulled out? I did the same with some shallots.

I had the same thing happen: a whole clove with sprouts. I put them out about 6 weeks ago, even before the last frost. Now, they have grown about 6 inches high and have visibly spread. My neighbor told me to plant them about 1 inch deep, under fine soil, and to keep them moist for the first week. In 2 months--well before the summer is over--I'll harvest 9 or 10 bulbs, all for the price of 1!

optimally, garlic should be planted in the fall and harvested mid-summer. if you just planted it in the spring, i'm not sure how it will turn out. let us know!

What you did should work, but be advised that garlic is really invasive. You will have more growth each year.
